Peach Cashew Pasta Salad

Going to a summer block party, having people over, going to a picnic – well here is a delicious pasta salad to take and enjoy!

Peach Cashew Pasta Salad:
-take 1 cup to 1 1/2 cups of a smaller shaped pasta, cook and cool (I used whole wheat pasta)
-coat pasta in a light drizzle of olive oil and set aside

In larger bowl place the following ingredients:
-2 peaches peeled and cut in smaller cubes
-1/2 of a red pepper cut in smaller thin strips
-2 tablespoons of apple cider vinegar
-1 tablespoon of olive oil
-2 tablespoons of raw sugar
-6 (about) fresh basil leaves
-season to taste with sea salt, pepper (we used flower pepper), garlic powder
-add handful of cashews
-place cooled pasta in bowl with rest of ingredients and fold together
-place in refrigerator to serve cold and crisp at your gathering and enjoy

Top the salad with a tart and zesty pop of feta cheese, YUM!!
